Carrigaline Chef and Entrepreneur Aidan Roche opened the doors on his latest business venture last week, Happy Days.
Happy Days is a deli specialising in carefully selected artisan sandwiches offered on a rotating menu, quality bakes, coffee and a simple breakfast menu which accommodates gluten-free and vegan diets.
The deli is the love child of four hospitality sector extraordinaries, John Barker: former head chef at Good for the Soul, Chloe O’Leary: former manager of Market Burger and Chris Curtin, former head chef of the Oyster Tavern and Roche who brought Poulet-Vous to the Marina Market in 2021.
“With backgrounds spanning from kitchens to street markets, across the world, we are passionate about delivering quality matched by efficiency and complemented by the a smile” Aidan told The Carrigdhoun.
Happy Days is located in the old ground café on Penrose Wharf in Cork City, the spacious set-up allows for quick grab-and-go lunch and dine-in service in 26 seats available inside and a further 12 outside.
What was originally intended as a ‘soft launch’ didn’t go quite to plan as the deli has sold out as word quickly spread and the newly opened deli has seen queues of customers, and even sold-out in their first few days of business.
Some may question their choice in opening a new deli when the hospitality sector is in turmoil, on average two restaurants close in Ireland every day.
“We fear there will be more to come, but it is this passion and commitment that spurs us on” John, Operations Manager and part owner said, “we truly believe that with tenacity, heart and bucketloads of flavour, there are happy days ahead”.
It is hoped that, following the success of the Penrose Wharf location, they will looked to expand business to the south of the City.
